Tapioca Waffles

2 eggs - separated

1 cup buttermilk

1/4 cup oil

1 cup Rice Flour

1/2 cup Tapioca Flour

1 1/2 tsp baking soda

1 tsp baking powder

Beat egg whites to form dry peaks. Set aside. Mix egg yolks with buttermilk and oil. In a separate bowl stir dry ingredients together. Mix egg yolk mixture into dry ingredients. Fold in egg whites. Bake in an oiled waffle iron.
